Cafe Rio Copy Cat Sweet Pulled Pork Salad
I love Cafe Rio pulled pork salad but we can only get it in the USA, and because I’m from Canada its a treat when we go there. You feel like you’re getting all the food groups in a meal, it’s awesome!
I LOVE being able to make this at home, and incorporating Thrive Life freeze dried ingredients speeds it up so much that I don’t have to stress about all the prep that would normally be involved!
Salsa:
Ingredients:
- 1 cup chopped tomatoes
- 1/2 cup parsley
- 1/2 cup cilantro
- 1 cup green onions
- 1 tsp. Thrive Life Limeade (Seasonal)
Directions:
- Combine all ingredients and set aside
Black Beans:
Ingredients:
- 1/2 cup Thrive Life Instant Black Beans
- 1/2 cup hot water
Directions:
- Add water to the beans in a small bowl and cover with a lid
- Let sit for at least 10 minutes
Rice:
Ingredients:
- 1 cup Thrive Life Instant White Rice
- 1 tsp. Thrive Life Tomato Powder
- 1 tsp Thrive Life Vegetarian Chicken Bouillon
Directions:
- Add all ingredient to a bowl
- Add just enough boiling water to cover the rice
- Cover and let sit for at least 5-10 minutes
Pulled Pork:
Ingredients:
- 1 cup Thrive Life Pulled Pork
- 1.5 cups boiling water
- Sweet BBQ sauce to taste (I use Diana Sauce Original)
Directions:
- Add the water to the pork
- Cover and let sit for at least 10 minutes
- Once refreshed, add desired amount of BBQ sauce
Taco Bowl:
Ingredients:
- Large tortilla shells
- Shredded cheddar cheese
Directions:
- Heat 1 tortilla at a time in a hot pan, flip and heat the other side adding the shredded cheese on it to melt
- Place cheesy shell in a bowl to create a “taco shell bowl”
Plating:
- Take the taco shell bowl and add rice and beans
- Add pulled pork
- Add lettuce
- Add salsa
Additional ingredients that I add:
- Guacamole
- Sour cream
- Cilantro
- Cafe Rio Ranch Dressing (recipe below)
- Lime wedge
Cafe Rio Salad Dressing:
Ingredients:
- 1 pkg. Hidden Valley Ranch Original dressing mix
- 2 cloves garlic (minced)
- 1 cup buttermilk
- 1/2 cup fresh cilantro
- 1 cup mayonaise
- 2 large tomatillos
- 2 tbsp. lime juice
- 1 large jalepeno
Directions:
- Add all ingredients into a blender and blend well.
- You can keep in in the refrigerator for up to 2 weeks, just shake before using!
